  1. Prepare the filling

    • Heat cooking oil in a large skillet over medium heat. Sauté onion until translucent.
    • Add ground meat and cook until browned and crumbled.
    • Stir in shredded carrots, bean sprouts, cabbage, and soy sauce. Cover and cook for a few minutes until vegetables are softened.
    • Beat eggs and pour over the mixture. Turn off the heat to prevent overcooking the vegetables.
    • Drain. Season with salt and pepper to taste. Let the mixture cool completely.
  2. Assemble the egg rolls

    • Lay an egg roll wrapper on a flat surface with one corner pointing towards you, like a diamond.
    • Place about 1 1/2 tablespoons of the filling in the center of the wrapper.
    • Fold the bottom corner over the filling, then fold in the sides. Roll up the wrapper tightly, sealing the top with a beaten egg mixture.
  3. Fry the egg rolls

    • Heat cooking oil in a deep fryer or large pot to 375°F (190°C).
    • Carefully lower egg rolls into the hot oil and fry until golden brown and crispy.
    • Remove egg rolls from the oil and drain on paper towels.
  4. Serve
